I’m wondering if the MailChimp integration would allow me to keep my WP “subscribers” separate from my other “users” (i.e.: Administrator, Editor, etc.), so that a comprehensive view of only my WP Subscribers can be easily viewed and managed. Or, does the integration simply just add new subscribers to the MailChimp emailing system only.

This is correct. It’s a one-way integration, I don’t see any way to separate Users through MailChimp.
