Is there a way to set which page is displayed after a user logs out? If so, where is this setting?

I’m afraid this currently isn’t part of s2Member. You would have to implement this yourself.

If you generate the logout link with http://codex.wordpress.org/Function_Reference/wp_logout_url, it’s possible to set a redirect there.

There may be plugins that make it possible to set the logout redirection after logout from the Dashboard. http://wordpress.org/extend/plugins/search.php?q=logout+redirect
